The history of coffee in the old Hapsburg capital dates back to 1683, and the Turkish siege of Vienna, and perhaps earlier. Mellow Gillies Brazils, and mature off-the-green Milds were made to be dark roasted together, as they were in the old country (The Schoenholt family came to the US from Zalischyk, along the Dniester River, in the Easternmost province of Bucovina, in what was then Austria-Hungary). The keynote of Vienna blend is its soft quality and vanilla finish. Designed for a simple, pleasurable cup. Add a dollop of "schlag" (unsweetened whipped cream) and you have a regal dessert. We are told that Vienna makes an excellent Northern Italian style espresso, as in Trieste, a pre-World War I Austrian city. Trieste always brings to memory my friend Dr. Ernesto Illy, of Illycaffe whose family was originally Austrian.
